The science behind it
Your large intestine hosts trillions of bacteria spanning hundreds of species, and their composition shifts measurably within days of a diet change, as David and colleagues showed in a landmark 2014 Nature study. That speed is the entire premise of a 30-day reset: the system you are trying to change is unusually responsive.
Diversity is the metric that matters most. The American Gut Project, one of the largest microbiome studies published, found that people eating more than 30 different plant foods per week had markedly more diverse gut microbiomes than those eating 10 or fewer. That is why this plan pushes new plants, legumes, and variety rather than a single miracle food.
Fermented foods earn their daily slot from a 2021 Stanford study by Wastyk and colleagues in Cell, in which ten weeks of a diet high in fermented foods like yogurt, kefir, kimchi, and sauerkraut increased microbiome diversity and lowered markers of inflammation across 19 inflammatory proteins.
The plan also works the gut-brain axis in both directions. Your gut and brain are wired together through the vagus nerve, which is part of why stress shows up as digestive discomfort.
